Six properties make up this section, and each is shaped by a building or a piece of ground with an earlier use. A seminary courtyard, a limestone works, a coastal terrace, a walled kitchen garden. The entries keep to what is published about these places: what the structure was, what stands there now, and which parts are open.

Portrait Milano

Milan, Italy

Portrait Milano occupies a courtyard building off Corso Venezia that served for centuries as an archbishop's seminary before its conversion. A passage now runs from the street into the colonnaded courtyard, which is open to people who are not staying. Rooms face this inner square, and the ground floor carries restaurants and shops under the arcade.

The setting

The house sits inside the Quadrilatero district, among fashion houses, offices and older palaces. Its gate on Corso Venezia leads through to the courtyard, one of the larger enclosed courtyards in the centre of the city. Trees and seating stand along the arcade, and street noise drops as soon as the passage is behind you.

Inside

Guest rooms look onto the courtyard or the surrounding streets and follow the lines of the old cloister corridors. The ground floor mixes hotel and public use, with a restaurant, a bar, shop fronts and a spa reached from the inner side. The arcade is treated as a passage through the block rather than as hotel space.

Notes

Because the courtyard is open to visitors, the ground floor grows busy in the evening and during fashion weeks. Restaurant and spa access may need arranging separately from a room. Entry to the courtyard is through the gate on Corso Venezia rather than through the hotel lobby.

Hotel Il Pellicano

Hotel Il Pellicano stands on the rocks of the Monte Argentario promontory above the Tyrrhenian Sea, south of the village of Porto Ercole. The main house and its low outbuildings sit in terraced gardens that step down the slope. From the terraces a path and a lift lead to a bathing platform cut into the rock rather than to sand.

The setting

The site is steep and planted, with olives, pines and low walls holding the terraces in place. The house looks west across the water toward the island of Giglio. No through road passes the property, and the nearest village and harbour lie a short drive along the coast road. Much of the ground is reached by steps.

Inside

Rooms are spread between the main house and separate cottages in the garden, so many are reached across the terraces rather than along corridors. Public rooms include a restaurant, a bar and sitting areas that open to the outside. In warm months the pool and the terraces above the rocks carry most of the daytime use.

Notes

The property closes for part of the year, so confirm the season before planning a stay. The descent to the water involves steps and a lift, which matters for anyone with limited mobility. Rooms in the garden cottages are reached in the open air, whatever the weather.

Fabriken Furillen

On the Furillen peninsula in the north-east of Gotland, Fabriken Furillen occupies a former industrial site. Limestone was quarried and processed here before the works closed, and the plant buildings were later converted into rooms and public spaces. The ground around them still shows the quarry floor, gravel banks and traces of the earlier operation.

The setting

The peninsula is flat, open and largely treeless near the works, with the Baltic on several sides and pine forest inland. A gravel road leads out to the site, and there is little else along it. The main building keeps its industrial outline, and the ground around it has been left rough rather than landscaped.

Inside

Rooms sit inside the converted works building, with a smaller number of cabins placed out on the ground beyond it. The restaurant and lounge occupy the larger halls, where the original structure stays visible. Bicycles and walking routes are the usual way to reach the shoreline, and the site is used for photography and film work as well.

Notes

The location is remote, so settle transport and meals before arriving rather than assuming there are options nearby. Opening varies through the year, and the outlying cabins are seasonal. Sturdy shoes help on the quarry ground, which stays uneven in every kind of weather.

The Slow

The Slow is a small concrete house in Canggu, on the south coast of Bali, built around a courtyard and an open ground floor. Alongside guest rooms it runs a gallery, and the restaurant and bar are used by people who are not staying. Batu Bolong beach lies a short walk down the lane from the door.

The setting

The building stands on a busy lane lined with shops, cafes and rented motorbikes, close to where the road reaches the sea. Rice fields remain a short distance inland. The street facade is plain and heavy, while the interior opens to the sky, so most circulation happens in the open air rather than in corridors.

Inside

Rooms sit above and beside the courtyard, reached by open stairs and walkways. The ground floor holds the restaurant, the bar and the gallery, which shows changing work along with pieces collected by the owners. Seating spreads between the pool, the courtyard and the covered edges, and the same spaces serve guests and visitors together.

Notes

The lane outside stays busy through the day and into the evening, and traffic noise carries. Gallery displays change, so ask what is on show rather than expecting a fixed exhibition. Restaurant tables are open to people who are not staying and fill in high season.

Hotel Esencia

Hotel Esencia occupies a former private estate on the Caribbean shore of Quintana Roo, between Playa del Carmen and Tulum. The main house stands back from the beach in mature garden, with separate buildings and pavilions set among the trees. Guests move between the house, the gardens and the sand along paths rather than through one internal corridor.

The setting

The grounds run from the highway side through jungle planting to an open stretch of beach. Palms and dense low growth screen the buildings from one another, and much of the site stays shaded through the day. Neighbouring properties sit well apart, and the shoreline in front of the hotel is quiet by the standards of this coast.

Inside

Accommodation divides between rooms in the original house and separate suites and villas in the garden. Public parts include restaurants, bars, a spa and pools, placed in their own structures instead of within one block. Several buildings are open on at least one side, so indoor and outdoor space run together for most of the year.

Notes

Distances across the grounds are longer than the number of buildings suggests, and paths are dim in places at night. Restaurant and spa arrangements vary by season, so confirm what is running. A car or a transfer is needed, since the site lies off the coastal highway.

The Newt in Somerset

The Newt in Somerset is a country estate near Bruton where a Georgian house, walled gardens and farm buildings have been brought into one working property. Part of the estate is open to day visitors, and guests stay in the house and in converted farm buildings. Cider making, orchards and kitchen gardens form part of the daily operation rather than a display.

The setting

The estate sits in rolling farmland in south Somerset, with woodland, pasture and orchards inside its boundary. Paths connect the gardens, the cyder works and the visitor buildings across a considerable area. Bruton lies a short drive away, and the surrounding lanes are narrow and quiet. Ground across the site rises and falls throughout.

Inside

Guest rooms divide between the main house and buildings around the former farmyard. Restaurants, a spa and a shop occupy their own structures, and the gardens carry glasshouses along with a large walled kitchen garden. Some parts, among them the gardens and the cyder works, are open to ticket holders who are not staying overnight.

Notes

Garden access and opening arrangements differ for day visitors and for staying guests, so check before arriving. Planting changes with the season, and parts of the ground close for work. Walking distances across the estate are long, and the paths are exposed in poor weather.
